PATA PORA KATLA MAACH: Bengali Tradition Wrapped in Banana Leaf

When Bengali culinary tradition meets a smoky twist, the result is Chef Aabhik’s Pata Pora Katla Maach — a simple yet flavour-packed dish that puts Katla fish centre stage.

For this special recipe, 350 grams of Katla fillets are first marinated with lemon juice, salt and ginger-garlic paste for around 30 minutes. The fish is then coated in a bold mixture of mustard paste, poppy seed paste, coriander, mint and green chillies, bringing together the unmistakable flavours of Bengali cuisine.

But the real magic happens with the banana leaf.

The leaves are gently softened over an open flame, making them flexible enough to wrap around each marinated fillet. The parcels are secured with toothpicks and pan-fried in mustard oil until the banana leaves become charred and crisp.

That charring is the secret—it locks in a delicious smoky, earthy aroma, while helping the fish remain tender and juicy inside.

Once cooked, the parcel is opened to reveal succulent, flavour-packed Katla, ready to be enjoyed hot with steamed rice.

Unlike regular pan-frying, the banana leaf adds a subtle earthy fragrance that takes the dish to another level.

Chef Pritam describes it as his special recipe, combining Bengali authenticity with a comforting homestyle touch.

Minimal fuss. Bold flavours. Maximum Bengali nostalgia.

That’s Pata Pora Katla Maach — where tradition gets wrapped, roasted and served with a smoky little attitude.
